Can an IoT device work without continuous internet?

Depending on the application, local buffering, offline operation and later synchronization can be designed into the system.

Can you use RS485/Modbus for industrial equipment?

Yes. RS485/Modbus and similar industrial interfaces can be integrated where appropriate.

Can you build both the device and dashboard?

Yes. Device hardware/firmware and the software side can be developed as one integrated project.

Can the system support multiple devices?

Yes, but the architecture depends on the expected device count, communication method, data rate and management requirements.
